That is the shortest list I have had in a loooooong time. I feel a little selfish, but I guess it's ok every once in a while. :)
I made some yum parmesan buttermilk biscuits this morning. Here's my recipe:
2 cups all purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 tsp baking soda
4 tbsps cold unsalted butter, cut into small cubes
1 and 1/2 cups cold buttermilk
3/4 cup shredded parmesan cheese
Heat oven to 500 degrees. Spray 9-inch round cake pan with nonstick cooking spray. Spray inside and outside of 1/4 measuring cup with nonstick cooking spray. Flour a baking sheet.
In food processor, pulse flour, baking powder, salt, and baking soda until mixed. Scatter butter cubes over dry ingredients and pulse until mixture becomes pebbly. Transfer mix to bowl and add buttermilk and parmesan cheese. Stir with spatula until just incorporated (dough will be wet and fluffy).
Using the 1/4 measuring cup scoop level amount of dough onto floured baking sheet (should make 12 mounds). Dust tops of dough with flour. With floured hands, pick up mound and form into a ball shaking off the excess flour. Place in prepared cake pan. Repeat with each mound, placing formed balls 9 around perimeter of pan and 3 in the middle. Brush the tops with buttermilk and sprinkle extra parmesan cheese on top.
Bake 5 minutes, then reduce oven temperature to 450 degrees and bake another 15 minutes or until biscuits are golden brown. Cool in pan 2 minutes, then invert biscuits from pan onto clean kitchen towel. Turn biscuits right-side up and break apart. Cool 5 minutes and serve. To reheat - place on baking sheet in 475 degree oven for 5-7 minutes.
I'm on a big glass bottle kick. I've saved up probably 10 wine bottles and I'm going to make something really cool with them... probably next year though. Pretty Good
